Thick, sweet, and creamy soup with hearty chunks of chicken.
– 2 lbs chicken breasts
– 2 lb Sweet potato
– 2 lb Bananas, Mashed Cavendish
– 2 c Heavy Cream
– 1 32 oz box of chicken stock
– 1/2c potato flour
– 1 tsp ground ginger
– 1 tsp ground allspice
– 1 tblsp ground turmeric
Bring the chicken stock and cream to a boil in a large pot. Peel and rough cut the sweet potatos, then add to the stock/cream mix.
Add the raw chicken breasts to the stock.
Boil for twenty minutes, then reduce heat to a simmer.
Remove the chicken and cut into rough chunks.
Remove the potatoes and mash them in large mixing bowl. Add whole bananas to the mashed sweet potatos and mash together. Scoop the mixed mash back into the pot with the chicken stock and mix evenly.
Add the chunked chicken, cream, potato flour, and spices. Mix, return to a boil, reduce heat, and simmer for 20 minutes.
