Yet another meatloaf variant, this one comes in a pie.
– 1lb ground beef
– 1c shredded carrots
– 1c bread crumbs
– 1c shredded cheddar cheese
– 2 eggs
– 1 large sweet potato
– 1/2 tsp black pepper
– 1/2 tsp salt
– 1 9″ pie crust, bought or home made
Preheat oven to 425 deg F.
Place pie crust in a 9 inch pie tin.
Peel the sweet potato and shred it with a cheese grater or food processor then place in a large mixing bowl. Add meat, cheese, eggs, bread crumbs, carrots, and spices and mix evenly. Scoop the mixture into the pie crust.
Bake for 20 minutes at 425 deg F, then reduce heat to 350 deg F and bake for another 30 minutes.
