Meatloaf Stuffed Onions

Seems like I’m on a meatloaf food blogging kick. Today’s recipe is no exception. Delicious, but for the onion lover only.

Ingredients:
– 1lb ground beef
– 1c shredded carrot
– 1c bread crumbs
– 1c shredded cheddar cheese
– 2 eggs
– 2 large onions
– 1/2 tsp black pepper
– 1/2 tsp salt

Dierctions:
Preheat oven to 425 deg.

Peel the large onions and then cut in half. Remove the inner layers leaving only the two outermost layers. This will leave you with eight large onion half bowls.

Chop the onion middle parts finely and add to a large mixing bowl. Add meat, cheese, eggs, bread crumbs, carrots, and spices and mix evenly. Scoop the mixture into the onion bowls.

Bake for 50 minutes at 425 deg.
