Apple Carrot Meatloaf Stuffed Squash



Sweet and savory meatloaf inside of your squash of choice.


– 1lb ground beef
– 1c shredded carrot
– 1c shredded cheddar cheese
– 2 shredded apples
– 1c bread crumbs
– 1 egg
– 1 acorn, buttercup, kabocha squash or pie pumpkin. (Kabocha is shown in the attached pics)
– 1/2 tsp black pepper
– 1/2 tsp salt
– 1/4 tsp ground cinnamon

Preheat oven to 450 deg.

Cut acorn squash in half or cut the lid off of a buttercup, pumpkin or Kabocha. Scoop out the guts and seeds and throughly scrape the sides of the squash. Separate the seeds for toasting, the guts can be discarded or pureed and added to the meat mixture.

Mix meat, cheese, eggs, bread crumbs, carrots, spices, and apples together in a large mixing bowl. Scoop the mixture into the squash.

Bake for 15 mins per pound of squash + 30 minutes per pound of meat at 450 deg.
